Squash Bread Recipe

I've had many requests (actually just 1) for the recipe for the Summer Squash Bread I made recently. Here it is Jackie!

3 eggs, beaten
2 c white sugar
1 c vegetable oil
2 tsp vanilla extract
3 c flour
3 tsp baking powder
2 tsp cinnamon
2 tsp nutmeg (I didn't have any & left it out)
2 c shredded summer squash

Preheat oven to 325 degrees. Grease a 9x13 baking dish. Beat eggs until fluffy. Add sugar, oil & vanilla. Gradually mix in flour, baking powder, cinnamon, & nutmeg. Fold in squash. Bake 45 minutes until a knife inserted in center comes out clean.

It wasn't quite as sweet as I thought it would be, but for bread I guess it doesn't need to be that sweet. Enjoy!
